A delicious steak and eggs recipe featuring a perfectly cooked NY Strip steak paired with salt cured egg yolk. The steak is seasoned and cooked to a perfect internal temperature, then topped with the cured yolk for an exquisite flavor. A chimichurri sauce is optional to add more zest to the dish.

Instructions

1: Bring your NY Strip steak to room temperature and season well on both sides, coating the edges.

2: Cook the steak until it reaches an internal temperature of 130-135 degrees and rest for 10 minutes.

3: Slice into the steak, adding a little salt if needed, and shave on the cured egg yolk.

4: To cure egg yolks, mix 3 parts salt to 1 part sugar.

5: Separate the egg yolks from the whites.

6: In a container, pour in an even layer of the salt and sugar mixture.

7: Make divots with an egg for the yolks and carefully place one yolk into each divot, covering completely with the mixture.

8: Place the container in the fridge for 5-7 days.

9: After curing, wash off the yolks gently with water and place them into an oven at the lowest temperature for an hour and a half.

10: Once cured, shave the yolks onto your steaks or any dish you like.
