Smoked Lemon Pepper Wings

1: Preheat the smoker to 350°F.

2: Season wings with lemon pepper seasoning and cornstarch.

3: Place the wings directly on the grates, close the lid, and let them smoke for 30 minutes.

4: Roast a head of garlic for the wing sauce: slice the top off, drizzle 1 tablespoon of olive oil, season with salt and pepper, wrap in foil, and roast for 45 minutes at 350°F with the wings.

5: After 30 minutes of smoking, flip the wings and let them smoke for another 30 minutes.

6: After smoking for 1 hour, cook the wings over direct heat for 5-10 minutes to crisp up the skin.

7: Once the internal temperature reaches around 180°F, pull the wings off and place them in a bowl.

8: Pour in your sauce made from unsalted butter, lemon juice, lemon zest, black pepper, hot sauce, honey, and garlic powder, then toss to coat.

9: Garnish with extra lemon zest, parsley, and cracked black pepper.
