Smoked Cream Cheese with Bacon Jam

1: Score and season 1 block of cream cheese and smoke with pecan wood for up to 2 hours.

2: Chop up 6 pieces of bacon until almost crispy then remove.

3: Reserve 1 tablespoon of bacon grease.

4: Add 1/4 cup of sliced red onions to the reserved grease and sauté until softened.

5: Add the bacon back to the pan with the onions.

6: Stir in 1/4 cup of apple cider vinegar, 1/4 cup of maple syrup, and 1/4 cup of brown sugar.

7: Add a few dashes of cayenne to balance it out.

8: Reduce the mixture on low for 15-20 minutes until thickened.
