Juicy, smoky, and tender ribs are achievable on a gas grill using hickory wood chips. This method involves preparing wood chip packets, seasoning, and smoking the ribs with careful cooking steps for the best flavor.
Take two handfuls of hickory wood chips and place them in the center of some heavy duty aluminum foil, fold in half and seal all sides. Poke holes in the foil packet so the smoke can escape and flavor your food.
Trim your ribs and season them well on both sides with your favorite bbq rub.
While the ribs are resting, turn one of the burners on medium high heat and place your foil packet directly on the grill grates. After about 15-20 minutes, the wood chips will ignite and start smoking.
Place your ribs on the indirect side (with burner off), opposite of the hot grill grates where your foil packet is and smoke for 2 hours. Prepare 2-3 additional foil packets in advance for continuous smoking.
When the ribs reach about 165 degrees, wrap them in foil with two layers. In the center, add 3 pads of unsalted butter and drizzle honey, then place the ribs meat side down and wrap them.
Place them back into your smoker for an additional hour, meat side down.
Remove the ribs from the foil and flip meat side up. After about 15 minutes, add sauce to your ribs and let them cook for another 30-45 minutes.
 Remove, slice, and enjoy!
